Tian of crab with herb salad and tomato and chive dressing

Serves 4
Ingredients
Tian
500g crab meat
2 limes, rind and juice
100ml mayonnaise
1 chilli, seeded and finely chopped
A little salt and pepper
Herb garnish
30g butter Small sprig of parsley
Small sprig of mint
Small sprig of chervil
Rocket leaves
Sprig of coriander
Tomato and chive dressing
4tbsp olive oil
1 ½ tbsp white wine vinegar
1 large tomato, diced
20g fresh chives, chopped
A little salt and pepper
Method
Squeeze the crab meat over a colander in the sink to remove the excess moisture,
and put the meat into a large bowl.
Add the mayonnaise, lime juice and zest, and chilli to the crab meat and mix well.
Place the mixture in the fridge for 10 minutes.
Remove from the fridge and season to taste. Place a tian mould on each plate and
fill with the crab mix, pressing it down to make sure it holds together, then
carefully remove the mould.
Place the herb sprigs on top of the tian.
Then make the dressing. Mix the olive oil, vinegar, diced tomatoes, chopped
chives, a little salt and pepper in a bowl.
Drizzle the dressing generously around the tian before serving.
